Philippe Pacalet is easily one of our favourite Burgundians, combining a wicked sense of humour with his own bold approach to winemaking that has placed him at the forefront of the Cote d’Or. What else would you expect from the former winemaker at the illustrious Domaine Prieuré-Roch?! Burgundy Marcs, or "Marc de Bourgogne," is a traditional French eau-de-vie made from the pomace of grapes—skins, seeds, and stems—left over after pressing for wine production in Burgundy. Known for its robust and rustic character, this spirit captures the essence of the Burgundy terroir and is similar in style to Italy's Grappa. Enjoy as a digestif, served in small glasses at room temperature.
