Wildman Wine is redefining Australian Pét-Nat with fun, fresh, and fault-free wines, driven by the adventurous spirit of founder and winemaker Tim Wildman MW. Since the first vintage in 2014, the winery has evolved, sourcing premium fruit from Australia 's finest regions including Adelaide Hills and McLaren Vale. Italian varietals including Arneis, Fiano, Lagrein, Montepulciano, and Prieto Picudo add intrigue to their playful releases, with Astro Bunny and Piggy Pop earning acclaim worldwide for their vibrant, complex, and approachable personalities. Viticulture Fruit is allowed to ripen slowly, achieving full flavour development while retaining freshness and natural acidity. Whites are picked early to maintain bright acidity and lower alcohol levels, while reds are carefully selected to contribute spice, complexity, and structural balance.
Winemaking
Reds are co-fermented, often with a portion of whole clusters, and pressed early to achieve delicate colour and gentle tannins. Fermentation occurs with wild yeasts and without any additions, filtration, or fining. The wine is bottled with approximately 12 g/L residual sugar, completing fermentation in the bottle over winter to produce a soft, frothy mousse at around 3 bar pressure, gentle, not aggressive. Tasting Note A captivating "liminal pink" colour sits between rosé and chillable red. Aromas explode with red cherry, cherry pip, and glacé cherry. The palate is layered with pomegranate, blood orange, spice, and a savoury amaro-like twist of raspberry-salted liquorice. Soft, foamy bubbles and bright Nero acidity create a refreshing, textural wine, while Lagrein and Montepulciano add structure and Prieto Picudo contributes exotic spice notes.
