The vineyard's unique geology—greywacke boulders and gravels topped with windblown loess, volcanic ash, and humus from ancient forests—imparts intense fruit character and crisp, refreshing acidity. Hand-harvested at optimal ripeness, the grapes are gently pressed and fermented in stainless steel and older French oak barriques, followed by four to eight months on yeast lees.
