Vineyard & Production Hand-harvested from vineyards in the Dundee Hills, notably the organically farmed Découverte Vineyard. Volcanic Jory soils and the region's cool climate provide ideal conditions for Chardonnay, delivering fruit with natural freshness and minerality. Fermentation takes place in a mix of French oak barrels, stainless steel tanks and concrete eggs, followed by ageing for around fifteen months to build texture and complexity while retaining purity and tension. Tasting Notes This elegant Chardonnay opens with aromas of vine peach, orange blossom, honeysuckle and lemon peel, layered with apricot, vanilla, brioche and grilled hazelnut.
