Wines from Meursault are typified by aromas and flavors of ripe melon, hazelnut, and lemoncustard, and tend to be broader and more textural than wines from neighboring villages. Aging in 15-20% percent small French oak barrels lends notes of toast and vanilla.White Burgundy, with its richness, texture, and toasted flavors pairs well with light fish and shellfish and can counterbalance cream-based sauces. Oak-aged Chardonnay from warmerclimates lends itself well to grilled fish, starches, butter, and toasted nuts. This wine embraces orchard and citrus fruit, built with tension and acidity that keeps the pal- ate engaged and energized. It's linear and bright, has a saline-limestone finish, and a light lactic edge. Let it aerate or cellar for a year or two before revisiting. It should pair well with grilled octopus or pulled pork. The 2023 Meursault Les Chevalières has a nicely detailed bouquet, with fine mineralité and a touch of sea spray coming through with time. The palate is well balanced with fine acidity, a little more tension than the Le Limozin and a dash of white pepper toward the finish.
