Williams & Humbert A Winter’s Tale is a classic Amontillado-style Sherry from Jerez de la Frontera, crafted from a blend of Palomino and Pedro Ximénez grapes. Aged for a minimum of six years in the traditional Criaderas and Soleras system, the wine undergoes both biological and oxidative ageing—first developing under flor yeast before gentle exposure to oxygen adds depth and complexity. A small addition of Pedro Ximénez provides subtle sweetness and roundness, resulting in a beautifully balanced fortified wine that showcases the artistry of Jerez winemaking.
Meet the Producer
Founded in 1877 by Sir Alexander Williams and Arthur Humbert, Williams & Humbert has grown to become one of Jerez’s most respected Sherry houses. The bodega, located within the Sherry Triangle, benefits from the region’s unique microclimate, ideal for ageing wines under flor. With nearly 150 years of heritage, the winery continues to combine traditional craftsmanship with modern expertise to produce award-winning Sherries celebrated around the world.
Production
A blend of Palomino and Pedro Ximénez grapes is vinified separately before ageing in the Solera system for at least six years. The wine begins its maturation under flor, gaining delicate nutty and saline notes, before a period of oxidative ageing adds richness and complexity. The final blend is slightly sweetened with Pedro Ximénez for balance and roundness.
Tasting Notes
Dark golden amber in colour with aromas of dried fruits, toasted nuts, and aged wood, layered with subtle hints of flor. Smooth, round, and full-bodied on the palate, it offers rich flavours of walnut, caramel, and oak, balanced by gentle sweetness and a long, elegant finish. Food match Excellent as an aperitif or paired with roasted nuts, aged Manchego cheese, or smoked meats. Also a fine match for game dishes and pâté. Grape Palomino, Pedro Ximénez
Evidence boundary
This page combines the recorded bottle identity with linked source records. An exact region-name match supplies regional context but does not prove that this bottle carries the protected designation. A vineyard is only shown as bottle-level evidence when a wine-to-vineyard link exists. BottlePicker does not infer a vineyard, soil or site climate from a retailer title.
