Located in Umbria, not far from Orvieto, the Castello Della Sala is an ancient medieval castle built in 1350, and purchased by the Antinori family in 1940, after years of neglect, to renovate it and bring it back to the magnificence of the past. In the 170 hectares of vineyards surrounding the castle, production is concentrated on white vines, except for Pinot Noir. The historic 16th-century cellar located in the basement of the stronghold has been redesigned in a modern key to guarantee the production of wines of excellent quality and freshness. Bramito Della Sala is produced only from Chardonnay grapes from the land adjacent to the castle, characterized by a soil rich in fossil sediments and clayey, which gives elegance and minerality to the wine. After the manual harvest and the short maceration on the skins, a part of the must is fermented in wood and the rest in stainless steel vats at a controlled temperature. The wine shows a beautiful bright yellow color with greenish reflections. On the nose, this Chardonnay reveals a fresh fragrance of tropical fruits, pineapple, and citrus, followed by light vanilla notes. On the palate, it is complex and well structured, elegant and mineral, with delicate fruit notes accompanied by excellent freshness. Try it with white fish and vegetarian recipes.
