The Fernando de Castilla Antique Amontillado is a sublime, rich sherry from DO Jerez-Xérès-Sherry, aged for over 20 years in solera. Starting life as a Fino under flor, it is refortified and continues oxidative ageing, developing deep amber colour, hazelnut complexity, and intense aromatics. Elegant, versatile and utterly distinctive, this Amontillado is perfect for sipping or pairing with a wide range of dishes.
Meet the Producer
Bodegas Rey Fernando de Castilla, located in the historic heart of Jerez, is renowned for producing premium, artisanal sherries. Founded by the aristocratic Andrada-Vanderwilde family, the bodega remains committed to traditional methods and meticulous attention to quality.
Production
Grapes are sourced from partner vineyards in Jerez planted on Albariza soils and harvested in early September. This Antique Amontillado originates from a very old Fino (8 years), which is refortified from 15.5% to 18% ABV and introduced into a solera of Amontillado for an additional 12 years. Bottled without blending, cold stabilization, or filtration, the wine retains the purity, subtlety and full expression of its long ageing. Clear glass bottles showcase the stunning colour of this premium sherry.
Tasting Notes
This Amontillado shows a rich golden-amber hue, with an austere yet complex character. Aromas of orange peel, eucalyptus, varnished wood and fennel mingle with subtle nutty and spicy notes. The palate is dry, layered, and sophisticated, with tense acidity balanced by overwhelming flavour complexity, making it a truly sublime tasting experience.
Food Pairing
Pairs beautifully with consommé, hard cheeses, and tapas such as oxtail or chorizo sausage. Exceptional with chicken liver parfait, artichokes, asparagus, light game like pheasant or partridge, and wild mushrooms. Once opened, it will keep for several months.
Evidence boundary
This page combines the recorded bottle identity with linked source records. An exact region-name match supplies regional context but does not prove that this bottle carries the protected designation. A vineyard is only shown as bottle-level evidence when a wine-to-vineyard link exists. BottlePicker does not infer a vineyard, soil or site climate from a retailer title.
