Boccantino Primitivo Salento IGT Appassito is a rich, expressive red wine that exemplifies the depth and character of Southern Italy’s Salento region. Vineyard and Terroir The grapes are grown in the warm, sun-drenched vineyards of Salento, where the Mediterranean climate and well-drained soils help produce intensely flavoured fruit. Viticulture The grapes are partially dried using the Appassimento method, concentrating sugars and flavours while retaining natural acidity. Hand-harvesting ensures only the ripest bunches are selected.

Winemaking

After fermentation, the wine is aged for six months in French oak barrels, allowing the rich aromas and flavours to integrate and develop complexity. The Appassimento process, combined with oak maturation, results in a wine with depth, structure, and a luxurious texture.
