Bottega Vinai is their flagship Pinot Grigio, sourced from the Valle dei Laghi where a sub-Mediterranean climate and well-drained soils create ideal conditions for the variety. Careful vinification off the skins preserves the wine's delicate character, while four months of maturation in stainless steel maintains freshness and aromatic purity. This is Italian Pinot Grigio with real balance, texture, and a sense of place. Vineyard and Production Grapes are grown in the Valle dei Laghi in Trentino, benefiting from a sub-Mediterranean climate and well-drained, medium-fertile soils. Harvested at medium-low yields of 70 hectolitres per hectare, the grapes are softly pressed and fermented in stainless steel at 20 degrees Celsius using selected yeasts. Vinification is carried out off the skins to prevent colour extraction and preserve the wine's delicate character. The wine is then matured in stainless steel for four months to maintain freshness and aromatic purity.
