The grapes come from vineyards located in the historic Cava region, south of Barcelona, in the basin of the rivers Anoia and Foix, at altitudes between 300 and 700 metres. This area offers a unique microclimate, ideal for growing the finest grapes for Cava production. The grapes are harvested and vinified separately, early in the morning to preserve their freshness. A very gentle pneumatic pressing prevents excessive extraction of pigments. After bottling, the second fermentation and ageing take place in century-old underground cellars, located 30 metres below ground, at a constant temperature of 14 °C. On tasting, the aromas are characterised by red fruits reminiscent of strawberries, cherries and fleshy fruits. The palate is very fresh thanks to its lively and well-balanced acidity, with a slightly sweet finish and a effervescence that gives it a silky, rounded texture. The finish is intense and persistent. This cuvée is currently in the process of converting to organic farming.
