The terraced vineyards of Côtes de Thau rise gently from the western shores of the Étang de Thau, a renowned saltwater lagoon in southern France famous for its oysters and mussels. These vineyards are rooted in limestone clay and red sandstone, benefiting from their proximity to the sea, which helps moderate the intense Mediterranean heat. This unique coastal influence ensures even ripening of Grenache Blanc and Terret Blanc (a relative of Picpoul). Grapes are harvested at night, then destemmed and gently pressed before undergoing cool-temperature fermentation to preserve their delicate aromatics. A crisp, refreshing white with vibrant lime citrus notes from Terret Blanc, complemented by subtle stone fruit and the signature iodine minerality typical of this coastal terroir.
