This exceptional village Chablis has a deceptively pale yellow colour with hints of green, yet boasts pronounced aromas of ripe Mirabelle plum, exotic passion fruit and delicate white flowers. The texture is creamy and the palate has a lovely depth of flavour. The grapes are from three parcels of 70-year-old vines totalling 1.8ha in the left-bank lieu-dit of Les Pargues; they are crushed as whole clusters and fermented in tank and old casks (25%) before bottling.
