Drink now or cellar for up to 14 years. Serve chilled. This magnificent Grand Cru vintage Blanc de Blancs expresses the distinctive terroir of the Avize village from which it takes its name. The Avizoise is a monocru wine which is crafted from up to 50 year old vines which sit in the vineyards of Les Robarts and La Voie d’Epernay on a hill just to the north of the village itself. To add richness and extra complexity to the finished Champagne the wine is aged in oak barrels before undergoing the secondary fermentation in the bottle under cork. The Champagne then spends a total of four years ageing in the bottle with the lees before disgorging and its eventual release. Tiny persistent streams of bubbles are the first thing you’ll notice as you pour out a glass of this exquisite Champagne, followed by evocative aromas of citrus, freshly-baked croissants and ripe peach. On the palate there is a very subtle touch of sweetness which balances out the rich toasty and pastry flavours. The opulent character of this Blanc de Blancs make it an ideal aperitif for a special occasion or a charming match for elegant seafood dishes like oysters, scallops or fresh prawns.
