This is a non-vintage blend of Pinot Noir, Chardonnay, and Pinot Meunier, dosed at around 35g/l of residual sugar, which sounds like a lot until you taste how deftly Billecart-Salmon balances it: the acidity holds everything upright, the sweetness feels earned rather than applied, and the mousse is as fine and persistent as you'd expect from one of Mareuil-sur-Aÿ's most meticulous grandes maisons. It's generous without being cloying, and the finish stays fresh. Drink with something that can stand up to the sweetness: a tarte Tatin, a slice of Comté, or frankly, a wedge of something salty and blue.
