Located in Avize, in the heart of the Cote des Blancs, the Champagne House Le Brun Servenay has been managed since 1996 by Patrick Le Brun, supported in recent years by his son Gauthier, the fifth generation of this renowned family of winemakers. The estate extends over approximately 7 hectares of vineyards, at least 80% of which are planted with Chardonnay, and spread across 3 Grand Cru villages. Here, the clay-limestone soils with good drainage guarantee the production of fresh and mineral wines. The Melodie en C Blanc de Blancs Grand Cru is an elegant and delicate Champagne produced with only Chardonnay grapes that rests on its lees for years before disgorgement. This Blanc de Blancs has a lively and fresh aromatic profile with notes of citrus, apple, and white flowers, followed by a light iodine vein. On the palate, it is soft and lean, with a marked acidic vein and a strong mineral character. It is balanced and vibrant with a long and persistent finish and a very pleasant and fine mousse. Served chilled, it makes a classy aperitif, but it also pairs very well with oysters and sushi.
