The grapes were hand-harvested in late September, then whole-bunch pressed to preserve purity and freshness. Fermentation took place in stainless steel with 4–6 weeks of gentle lees stirring, adding texture and depth. The wine was then aged for 6 months on its lees in temperature-controlled stainless steel tanks. Completely unoaked, it retains a clean, vibrant expression of fruit and terroir.
Tasting Notes
This elegant white wine displays a delicate, aromatic nose with subtle herbaceous notes, followed by ripe, fleshy fruit on the palate. A fine linear structure supports a gentle complexity, while a refreshing mineral finish lingers beautifully. Thanks to the high proportion of Sémillon, the wine also has excellent potential for bottle ageing, gaining richness and nuance over time.
