Château-Chalon is the birthplace of Vin Jaune. Characterised by its yellow flavour', the wine possesses aromas reminiscent of dried fruit, particularly walnuts, very ripe apples, candied fruit and spices (curry, cinnamon, vanilla, nutmeg, etc.). Round on the palate with a lovely structure supported by a gentle acidity, it offers a lovely length on the palate with lingering aromas of walnuts and undergrowth. It is the minerality of the Château Chalon terroir that gives it its full complexity. This is a powerful, highly complex wine with great length on the palate.
