Today, winemaker Sarah Boireau works with consultant Dr Alain Raynaud to craft wines that marry history with modern precision.
Production
Château Dallau's 32 hectares of sand and gravel vineyards are planted mostly to Merlot, with Cabernet Franc and Cabernet Sauvignon completing the blend. Vines average 20 years of age. Grapes are harvested at full maturity in late September or early October, before careful sorting and crushing. Low-temperature maceration allows for maximum fruit expression, while vinification is temperature-controlled to ensure balance and structure.
