Grown on the limestone slopes of Château Lacaussade Saint-Martin, on the right bank of the Gironde estuary, Trois Moulins is a dry white wine from the Blaye Côtes de Bordeaux AOC, a blend of Sémillon, Sauvignon Blanc and Sauvignon Gris. Vinified in barrels and aged on fine lees with regular stirring, it offers a complex nose of exotic and candied fruits, underpinned by subtle oak. Rich and well-structured, with excellent ageing potential, it is particularly well-suited to pan-seared scallops or semi-cured foie gras, where its roundness will complement the richness of the dish.
