Produced with the utmost rigour, this cuvée exemplifies a quintessential Loire Chenin Blanc. The winemaking process highlights the delicious aromas of the Loire's other noble' grape variety. It is the expression of Loire Chenin Blanc in the style of Florian Mollet. Rigorous selection of the grapes through observation of the plots prior to harvest. Cold pressing to preserve the grape variety's fresh aromas. Temperature-controlled fermentation lasts 15 to 21 days and develops the wine's fruity and flavourful aromas. He aged a third of the cuvée in oak to highlight the grape variety's generous aromas and reveal its full potential.
