Produced from plots within the Chinon appellation, where the Senonian flint-clay soils – known locally as ‘cornuelle’ – lend the wine depth and structure. The grapes are harvested at peak ripeness and then vinified. The wine is then aged for around nine months in vats to preserve the fruit’s vibrancy and the balance of its structure. On the nose, this Chinon reveals an expressive bouquet blending blackcurrant, violet and a slight vegetal note typical of Cabernet Franc. On the palate, it is harmonious and structured, supported by lingering tannins and rich aromas of morello cherry, enhanced by delicate toasted nuances on the finish. An elegant and authentic red, capable of ageing gracefully for a few years in the cellar, ideal with game, red meats or characterful cheeses such as Sainte-Maure.
