The Fernando de Castilla Classic Amontillado is a traditional Spanish sherry, offering remarkable finesse, depth, and complexity. Often enjoyed as an aperitif, it also pairs beautifully with savoury and mature flavours.
Meet the Producer
Bodegas Rey Fernando de Castilla, based in the historic centre of Jerez, is renowned for producing some of the finest sherries in the region. The estate’s history dates back to the aristocratic Andrada-Vanderwilde family, and today it is celebrated for its craftsmanship and dedication to authentic sherry-making traditions.
Production
The grapes come from trusted vineyard partners in the Jerez district, grown on the region’s classic Albariza soils. After harvest in early September, the wine begins life as a Fino, spending 3 years under flor at 15% ABV. It is then re-fortified to 17% and transferred to the Amontillado solera, where it matures without flor, exposed to oxygen for approximately 5 years, developing its complex character.
Tasting Notes
This Amontillado displays a shining amber colour and an extraordinarily complex nose of raisins, nuts, and tangy aromas. The palate reveals layer upon layer of plump, savoury and nutty flavours, offering both sophistication and depth. Food Match Enjoy as a classic aperitif with salted almonds or olives. It is also excellent with mature cheddar, walnuts, or fresh figs.
