The Fernando de Castilla Classic Pedro Ximénez NV is a decadently sweet, solera-aged Sherry from Jerez de la Frontera. Intensely rich and velvety, it delivers concentrated dried fruit flavours balanced by a hint of freshness and a lingering, indulgent finish.
Meet the Producer
Bodegas Rey Fernando de Castilla, located in the historic centre of Jerez, was founded by the aristocratic Andrada-Vanderwilde family. The winery is renowned for producing premium, solera-aged Sherries, combining traditional methods with exceptional attention to detail, resulting in wines of remarkable purity, depth, and character.
Production
Made from Pedro Ximénez grapes sun-dried for up to two days in September to concentrate sugars. The naturally sweet juice is fortified to 15% ABV and aged in the solera system, producing the Classic PX with an average age of 12 years.
Tasting Notes
Opaque mahogany in colour, with aromas of raisins, prunes, dates, nutmeg, and clove, reminiscent of Christmas cake. The palate is luxuriously sweet and unctuous, balanced by a touch of acidity that keeps the flavours fresh and elegant. Food Match Perfect with rich chocolate tarts, festive desserts, or drizzled over premium ice cream for a decadent treat. Grape Varieties Pedro Ximénez 100%
Evidence boundary
This page combines the recorded bottle identity with linked source records. An exact region-name match supplies regional context but does not prove that this bottle carries the protected designation. A vineyard is only shown as bottle-level evidence when a wine-to-vineyard link exists. BottlePicker does not infer a vineyard, soil or site climate from a retailer title.
