The winery combines traditional Sicilian practices with careful, minimal-intervention winemaking to craft wines that are authentic, expressive, and sustainably produced.
Production
The Inzolia and Zibibbo grapes are hand-harvested and fermented on their skins at controlled temperatures of 17–19 °C. Inzolia undergoes a maceration of 2–3 weeks, while Zibibbo is macerated for six weeks, with gentle daily punch-downs during the early phase of fermentation. Once fermentation is complete, the wines are blended and left on fine lees for approximately three months before bottling, enhancing texture and complexity.
