Domaine Baud’s Côtes du Jura Les Prémices 2023 is an elegant and expressive Chardonnay, sourced from various predominantly marl-limestone terroirs, notably the grey marls of the Jura Triassic. Cultivated according to the principles of sustainable agriculture, the vines benefit from particular attention paid to soil conservation and biodiversity. Domaine Baud has been Terras Vitis-certified since 2015. Following slow pressing and a 12-hour settling period, the must is kept at a low temperature to preserve and develop its aromatic richness. Fermentation then continues in oak barrels, where the wine is aged for 18 months in large casks and topped-up barrels. This process lends depth and delicate brioche-like notes whilst respecting the Chardonnay’s natural freshness. On the nose, Les Prémices 2023 reveals a fresh and fruity bouquet, characterised by notes of vine blossoms, orchard fruit and citrus. On the palate, it is round, balanced and complex, with a lovely body accompanied by brioche-like nuances. A pleasant, tangy freshness prolongs the tasting experience and adds depth to the finish. This Jura Chardonnay is the perfect accompaniment to fish, cream-based dishes, mushrooms such as morels, white meats and, in particular, veal blanquette. It also pairs very well with Comté cheese, fondues and tartiflettes, and can be served as an aperitif.
