The Coulée de Serrant winery in Savennières is known for producing exceptional white wines. Biodynamically managed since 1981, the winery partly works the soil by horse (in the steep terroirs) and is also a 7-hectare AOP in its own right, completely owned by the Joly family. Matured in oak barrels for six to eight months and produced in very small quantities, Coulée de Serrant comes from vines more than 35 or 40 years old, some of which are over 80 years old. The harvests, done by hand or by horse, are effected in five passes over three to four weeks in order to obtain the most strongly-coloured level of ripeness possible... It is advised that you carafe it 24 hours before tasting in order to reap the benefit of its aromatic power, its length and its superb minerality...
