Domaine Bonnet Cotton is a winery initially founded in 1856 by Joseph Sanvers, taken over in 1976 by Evelyne and Guy Cotton, and today led by Pierre Cotton and Marine Bonnet who take care of the 12 hectares of vineyards spread across the appellations of Beaujolais, Brouilly, Côte de Brouilly, Régnié, and Fleurie. Régnié is a red wine made from Gamay grapes from an old vineyard of about 0.8 hectares planted on alluvial soil composed mainly of yellow granite. After manual harvesting, fermentation takes place in concrete tanks, where the wine macerates on the skins for about 20 days. The finished wine ages for 6 months in foudres and used barrels. The wine shows a clear and deep color with garnet tones. Its aromatic profile is fragrant and broad with notes of wild strawberries, raspberries, and cherries followed by spicy and aromatic herb notes. On the palate, it is lively, fresh and elegant. It has a medium body and a velvety structure. The tannins are smooth and the finish is long and mineral. It is excellent with goose terrine, rabbit, or guinea fowl with herbs, or with a mixed charcuterie board.
