Meet the Producer

The Fabre Family have been making wine for over 400 years, with their estate rooted in the Languedoc. Their historic cellar, built in the 18th century, still houses the original vats used by their ancestors. The vineyards for this wine come from the family’s La Grande Courtade holdings, carefully managed to produce ripe, high-quality Chardonnay grapes.

Production

Grapes are harvested at night and pressed immediately. 20% of the juice is fermented in oak barrels and aged 6 months on its lees with batonnage, while the remainder is vinified in stainless steel to preserve freshness. The wine is made from a blend of well-ripened and earlier-picked grapes, balancing richness with crisp acidity.
