Meet the Producer
Domaine du Pré Baron is a 45-hectare estate in Oisly, Touraine, run by Jean-Luc Mardon, the fifth generation of his family. Jean-Luc manages the vineyards sustainably according to Terra Vitis principles, ensuring ripe, expressive fruit and a careful, site-driven winemaking approach.
Production
The wine is made from 100% estate-grown Sauvignon Blanc from 25-year-old vines planted in sandy soils over clay subsoil. Grapes are harvested at optimum maturity and gently pressed, with 20–25% macerated on skins depending on vintage. Fermentation occurs slowly at 18°C in stainless steel vats over three weeks, with no malolactic fermentation. The wine is then aged on fine lees until bottling the following spring.
