Domaine du Touch Côtes de Gascogne Blanc Sec is a vibrant and aromatic white from Gascony, revealing a brilliant light yellow in the glass. The bouquet opens with notes of lemon, grapefruit, mirabelle and subtle fruity-balsamic nuances. On the palate, it is dry, crisp, and aromatic, with a light-bodied texture and a long finish showing hints of pomelo and apricot. Vinification The wine is a cuvée of Colombard and Sauvignon Blanc. Grapes are harvested quickly at the coolest time of day to preserve their delicate aromas, then carefully sorted and pressed. Fermentation takes place in temperature-controlled stainless steel tanks, followed by a period of maturation on the fine lees to enhance texture and complexity. Food match Serve well chilled at 8–10 °C. Ideal with asparagus salad with quinoa, spaghetti with yogurt-mint pesto, vegetable salads with beetroot, or as a refreshing aperitif.
