In these times it is important to stand for what you believe in, and more importantly to build the kind of business you believe in. The team at the Parker point-winning Garage Wine Co. does just this by reviving old vineyards in marginalized Chilean communities to make highly-prized wines. We have collaborated with the team at the Garage Wine Company to bring you Revival Old Vine PaÃs, a bestoke and truly unique wine that captures the essence of the ˜real' Chile. Made using the fascinating PaÃs grape - a variety taken to the Americas from the Canary Islands at the time of the Spanish conquest. It has been dry-farmed in Chile ever since, which means you don't get much more authentic in terms of Chilean wine than PaÃs! The grapes were harvested using traditional 'hand and horse' methods, fermented with wild yeasts and matured over winter in old oak barrels, to soften the wine and add complexity without introducing the overt oak aromas and flavours imparted by newer barrels. This wine is delicious now but can also be cellared for up to 5 or 6 years for extra complexity.
Evidence boundary
This page combines the recorded bottle identity with linked source records. An exact region-name match supplies regional context but does not prove that this bottle carries the protected designation. A vineyard is only shown as bottle-level evidence when a wine-to-vineyard link exists. BottlePicker does not infer a vineyard, soil or site climate from a retailer title.
