Gonzalez Byass Néctar is a naturally sweet Sherry of remarkable intensity and depth, made exclusively from Pedro Ximénez grapes and aged for nine years in the traditional criaderas and solera system in Jerez. Renowned as one of the sweetest wines in the world, Néctar showcases the opulent side of Sherry while retaining balance and freshness through carefully managed ageing and natural acidity. Produced from sun-ripened Pedro Ximénez grapes, the wine develops its signature richness through extended oxidative ageing, concentrating flavours and building a luxurious, velvety texture. The solera system ensures consistency and complexity, resulting in a wine that is indulgent yet poised, with exceptional length and aromatic persistence.

Meet the Producer

González Byass, founded in 1835, is one of the most respected and historic names in Sherry. Best known for Tío Pepe, the house combines centuries of tradition with technical precision, producing benchmark wines that define the styles of Jerez.

Production

Made from 100% Pedro Ximénez, Néctar is aged for an average of nine years in American oak casks using the criaderas and solera system. This prolonged ageing allows the wine to develop its deep colour, intense sweetness and layered aromatics while maintaining balance.

Tasting Notes

Intense ebony in colour. The nose is richly expressive, offering aromas of raisins, figs and dates, layered with honey, syrup and fruit preserves. On the palate, the wine is velvety and smooth, with a lush sweetness lifted by refreshing acidity. Long, flavourful and persistent on the finish. Food match Ideal with vanilla ice cream, dark chocolate desserts or caramel-based puddings. Also delicious served on its own as a luxurious after-dinner wine. Best enjoyed slightly chilled in a small wine glass. Grape Pedro Ximénez 100%

Evidence boundary

This page combines the recorded bottle identity with linked source records. An exact region-name match supplies regional context but does not prove that this bottle carries the protected designation. A vineyard is only shown as bottle-level evidence when a wine-to-vineyard link exists. BottlePicker does not infer a vineyard, soil or site climate from a retailer title.
