The stained glass window on this bottle comes from the Church of Notre Dame au Sablon in Brussels. Biodynamic since 1998, Domaine de l'Écu works by gravity without the use of pumps. Pressing is pneumatic, without settling. Fermentation is 100% indigenous yeast, and ageing is on lees in underground concrete vats. For this 100% Melon de Bourgogne, with its white gold colour, the attack is clean and straightforward, while the palate is crystalline and marked by great purity. The texture is slender, rich and complex, combining mineral and citrus notes. A wine with great length and a persistent iodine flavour, and definite ageing potential, which will delight lovers of seafood.
Evidence boundary
This page combines the recorded bottle identity with linked source records. An exact region-name match supplies regional context but does not prove that this bottle carries the protected designation. A vineyard is only shown as bottle-level evidence when a wine-to-vineyard link exists. BottlePicker does not infer a vineyard, soil or site climate from a retailer title.
