The description below is the retailer’s own wording.

Drink it now or cellar for up to 15 years. No need to decant, but best to open it half an hour before service. Founded in 1991 in the Ribeira Sacra by Pedro Rodriguez Perez with the help of his family, Adegas Guimaro is a Spanish winery that produces excellent wines based on indigenous varietals grown organically and using traditional production techniques. Produced in extremely limited quantities (only 800 bottles), Finca Pombeiras is a blend composed primarily of Mencía, with roughly equal additions of Brancellao, Merenzao, Garnacha, Mourvèdre, Feteasca Negra, and Sousón. The grapes come from a vineyard over seventy years old located on one of the Guímaro family's oldest estates in the Ribeira Sacra, approximately 350-400 meters above sea level. Here, the vines enjoy southern exposure and are rooted in slate and granite soils. After harvesting and spontaneous whole-cluster fermentation, the wine ages for a year in 500-liter oak barrels. In the glass, the wine reveals a deep garnet color. Its aromatic profile is broad and complex, with notes of ripe red fruit, hints of violet, aromatic herbs, and sweet spices on a light mineral undertone. On the palate, it is elegant, rich, and smooth, with fine tannins and balanced acidity. It has good structure and a long, refreshing finish. Try it with braised beef or braised rabbit with polenta.
