Tasting note Appearance: pale lemon, with limpid green hues. Aroma: Lifted aromatics of guava and nectarines with underlying citrus notes of lemon verbena and lime. There are subtle cues of custard apple, and a creamy, nutty nuance. Palate: The Sauvignon Blanc hits the mouth with bright zippy flavours evoking thoughts of sunshine and holidays. As these flavours of guava and nectarine subside, the strength of the Semillon shows its face. The citrus notes of lemon butter begin to rise, and the flavours continue to the very back of the palate. This is the perfect juxtaposition of what these two varieties can offer. The palate finishes with crisp chalky acid, as the fruit flavours gently fade. The persistence is surprisingly long. Food Ideas: salad of goats cheese, garlic and chilli prawns, Augusta whiting and chips from the local fish and chip shop. Cellaring: drink now, and cellar for up to 10 years The Semillon adds this longevity.
