Drink it now or cellar for up to 10 years. It is recommended to decant it for half an hour. Located in Seppeltsfield, among the hills of the Barossa Valley, not far from the banks of Greenock Creek, Hentley Farm is a family-run winery founded in 1997 by Keith and Alison Hentschke. Today, the estate spans approximately 150 acres and produces a wide range of excellent wines, from international varietals such as Shiraz, Grenache, Cabernet Sauvignon, Zinfandel, and Viognier. Shiraz grapes are sourced and hand-picked from 60-year-old vines planted in a single vineyard located in Light Pass. After harvest, 30% of the grapes are whole-cluster fermented. The finished wine then ages for a year in French oak before bottling and release. In the glass, the wine reveals a broad and ripe aromatic profile with notes of plum and blackberry, followed by hints of licorice and spice, with final peppery and smoky touches. On the palate, it is full-bodied and powerful, rich, juicy, and concentrated. It has lively acidity and soft, well-integrated tannins. It is generous and round with a long finish that recalls notes of spice and dark fruit. It is a wine that demands pairing with succulent dishes: try it with lamb stew, pulled pork, or roast pork belly.
