Drink it now or cellar for up to 5 years. No need to decant. Ilatium Morini is a Veneto winery founded forty years ago by the parents of the current owners. In 2004, the winery, which previously sold its grapes to the local cooperative, changed its approach and began vinifying its own grapes, quickly achieving excellent reviews from both the public and critics. Today, the winery remains in family hands, managed by seven brothers and cousins. Soave Campo le Calle is made with Garganega grapes (with small additions of Trebbiano di Soave) harvested from over thirty-year-old vineyards located in Mezzane di Sotto and Valle d'Illasi, over 200 meters above sea level, on calcareous-clay soils. After harvest and temperature-controlled fermentation, the wine rests in stainless steel tanks until bottling and release. In the glass, the wine reveals a crystalline color with straw-yellow hues. Its aromatic profile is fragrant and pure, with intense floral and fruity notes. On the nose, notes of golden delicious apple and peach emerge, along with mineral and tropical hints. On the palate, it is dry and supple, lively and medium-bodied, with a well-balanced acidity and a fresh, persistent finish. It is excellent with white fish, vegetable and seafood risottos, and medium-aged cheeses.
