ILatium Morini is led by seven brothers and cousins who, in 2004, chose to retain the best grapes from their vineyards to produce wine themselves. Since then, the estate has risen to the forefront of the new wave of Soave, Valpolicella, and Amarone production, earning critical acclaim, including praise from Jancis Robinson. Their wines are distinguished by concentrated fruit, bright acidity, and a clear expression of terroir. Viticulture The winery cultivates 40 hectares across Valpolicella and Soave. Grapes are hand-harvested at peak ripeness and air-dried for 25 to 30 days in small baskets, ensuring optimal concentration and intensity.

Winemaking

The grapes are destemmed and crushed, followed by controlled fermentation with delestage and pumping over for 12 to 15 days. The wine is then aged in 500-litre oak barrels for 24 months before a further six months of bottle ageing. Tasting Note A well-structured and complex wine, offering intensity, persistence, and character. Aromas and flavours of super-ripe black fruits are complemented by soft vanilla and warming spice, underpinned by vibrant freshness and firm, elegant tannins.
