L'Infiniment de L'Ou is the culmination of a decade's work. In the winery, the grapes undergo a complete vinification process: immediately after destemming, they are placed directly into semi-closed barrels to macerate for 3 to 4 weeks. They are then emptied, the grapes pressed, and the juice transferred back into these same barrels for 12 to 14 months of ageing. This meticulous work results in a wine of great finesse, with an explosive fruit-driven nose and a silky, flavourful palate. A Languedoc wine that is still relatively unknown, but absolutely perfect for accompanying the finest cuts of meat!
