Domaine de la Boissonneuse is a single holding of 11 hectares. The parcel is on a hillside beside the village of Préhy and contains kimmeridgian soil of exceptionally high quality, with very fine minerals.The 30 year-old vines grow on interspersed layers of limestone and clay, brimming with fossils. Fermented and aged in large foudres for ten months. Demeter certified biodynamic. Enthusiastic tendrils of linden blossom, peach, apricot and lime that harmonise with the lavish pie crust oak. Eloquently textured with a vibrant citrus acidity and length. The 2023 Chablis La Boissonneuse has another generous and well-defined bouquet with Clementine and peach skin, just a hint of candy floss and spice. Quite mercurial in the glass. The palate is taut and fresh with a fine bead of acidity. Sapid in the mouth with plenty of extract and umami sensation on the finish. This should be on your shopping list. Barrel Sample: 90-92 Definitely a green streak to the colour. The nose is full of energy, with a touch of verbena. Fine steely intensity, very Chablis, barely a feel of the vintage except around the edges. This has an exciting future. Barrel sample: 89-92
