Kanonkop represents the pinnacle of South African winemaking excellence.

Production

The wine was made from grapes that spent 5 days on the skins in open fermenters at a temperature of 29°C. The floating skins were punched down by hand every 2 hours during fermentation to ensure optimal extraction. The juice was drawn off the skins after 5 days. Following malolactic fermentation, the wine was matured for 24 months in 100% new 225-litre French Nevers oak barrels.
