Bacchus is typically an expressive, extroverted variety with strong aromas. This Bacchus is no exception and proved successful. The grapes were picked on the 9th of October. The fruit was very clean and displayed good ripeness levels in both sugars and flavours. Following whole bunch pressing the grapes, were fermented at a cool temperature to preserve the fresh, fruit forward aromas. After a short period of lees aging, the wine was filtered and bottled. It was clear to see before harvest that the 2018 Bacchus showed good ripeness and plenty of potential. Bacchus is an overt varietal somewhat similar in character to Sauvignon Blanc and the 2018 Bacchus shows the typical complexity associated with this varietal. On the nose, there is a range of aromas from fruity through to herbal. Gooseberry, citrus, tomato leaf and thyme abound. The palate is dry but wonderfully balanced with good fruit weight and freshness. Tart gooseberry and citrus flavours with a long lingering aftertaste. A great food friendly wine to enjoy with seafood or vegetarian cuisines.
