Vineyard & Production

Sourced from pergola-trained Albariño vines grown in the sandy soils of the Salnés Valley. Grapes are hand-harvested into 20kg crates and further sorted at the winery before gentle pressing. Fermentation takes place over approximately 15 days at 16–18°C using wild yeasts, followed by partial malolactic fermentation — also naturally driven — to add texture and roundness.
