In the natural valley of La Virada, facing due south and perched on a unique high-altitude terroir, Jean-Marc Grussaute crafts a white wine full of character, complex and well-balanced. This vintage is a refined blend of Petit Manseng, Gros Manseng, Petit Courbu and Camaralet, grown using biodynamic methods on clay-siliceous soils and weathered puddingstone. Vinified without destemming, using direct pressing, and fermented in 1,200-litre casks with indigenous yeasts, this dry Jurançon expresses all the purity and depth of the terroir. Ageing on lees for 10 months brings finesse, structure and elegance, resulting in a wine capable of ageing for up to 15 years. La Virada captivates with its freshness, complexity and balance; it is best enjoyed with lobster Thermidor, monkfish with cured ham, chicken with crayfish or mature goat’s cheeses, ideally served at 10°C after decanting to reveal its full intensity.
