Production

The grapes were hand-harvested into bins in the cool of the morning, then whole-bunch pressed with only free-run juice used for the final blend. A selected yeast strain was used for primary fermentation, with 10% of the Chardonnay undergoing malolactic fermentation. The wine was blended and bottled for secondary fermentation in the bottle, followed by 18 months of lees ageing before disgorgement.
