100% Pinot Noir on Terre de Marne marl and Thanet sand. Organic and biodynamic farming. Vinified completely in barrels with no added sulphites. On lees for eight months before bottling for secondary fermentation. Dosage 0 g/l.<br> Apples on the nose – really clean, fresh, chopped. And a cloud of fresh nutmeg. But on the palate the flavours move towards cooked apples, honey, developing a richer swirl and smoothness, a touch of melted butter and dried white currants. There is a definite sense of dried golden fruit and honeyed depth. Incredible that he's achieved this almost-lusciousness with no dosage. Black-pepper finish! Pretty exciting stuff.
