This Chardonnay comes from 40 to 50 year-old vines carefully cultivated on clay-limestone soils. The deep roots of these vines make them remarkably resistant to drought conditions, while their limited vigour contributes to the great finesse of this wine. The grapes are harvested early to preserve a fine acidic structure, balanced by a remarkable aromatic intensity which is revealed after fermentation in stainless steel vats at low temperature. After six months' light ageing on the lees, the wine is bottled, adding roundness and full-bodiedness to its structure.
