Vineyard & Production
Verdejo grapes are hand-harvested from selected parcels on stony clay and limestone soils in Rueda. Fermentation takes place using wild yeasts in stainless steel at 18–24°C, with malolactic fermentation occurring spontaneously. The wine is then gently racked and spends around three months on lees before bottling. No sulphur is added at any stage of the vinification process. The estate is certified organic.
Tasting Notes
Gentle floral and fresh grape aromas open on the nose, with inviting creamy vanilla notes. The palate has a lovely, rounded texture packed with distinctive leesy, bready, and floral character — complex, satisfying, and refreshingly different from conventional whites.
