Production
Hand-harvested grapes are sorted and 100% destemmed, with manual berry selection. Fermentation and maceration take place in a combination of concrete and 80-hectolitre tanks, with daily manual pigeage for around two weeks. The wine then spends 12 months ageing in new and used American and French oak, with minimal filtration before bottling.
